Greetings,
The word cookie derives from the Dutch word "Koekje", meaning little cake. Little cake date back to the 5Th century Persia (Now Iran), in United States and Canada it's a small flat cake. In England most English speaking countries outside North America the word biscuit is used. Little cakes came over with the first ships to New Amsterdam, it never went home, Cookies are as American as apple pie. We have recipes from the French, English, Germans, Austrians of the 14TH century. The Germans and Austrians bake some of the greatest cookies of all using ginger, cumin, poppy seed, and nutmeg since medieval times. But England became the heart land of the biscuit in the 19TH century and becane the natural partner of the English cup of tea. England biscuits "little cake" are plain and delicately flavored cakes baked to a crisp texture and since 1870 has been sold in hundreds of mixtures and shapes. Many other countries have strong traditions of making and baking little cakes Chinese, Spanish, Portuguese, Mexican, Italian, Caribbean to name a few. The American cookie (it's name Dutch) texture is more cakey than its England sisters, strong flavors with a heavy emphasis on chocolate and various nuts making it a chewy satisfying mouthful experience. American cookies are made in every region, state, town, and city. COOKIES (like the American apple pie) an American way.
With Love,
